The Les Saints Rémys vineyard is located on the western slopes of Ambonnay near the border with Bouzy. Deep chalky soils with traces of red clay and silt give this Champagne its characteristic combination of structure, salinity, and mineral tension. The vines are farmed biodynamically and plowed using horses to maintain soil vitality. In the cellar, Benoît Marguet favors spontaneous fermentation with natural yeasts, aging in wood, and minimal intervention. Bottled with zero dosage, Les Saints Rémys reveals the pure identity of its origin: aromas of red berries, citrus zest, and brioche meet a chalky minerality and a long, vibrant finish.
