De Stefani - Solér IGT 2022

"Solér" is a Venetian word for "attic." It is where grapes were once—and sometimes still are—left to dry after the harvest. The "appassimento" method originates from Valpolicella and became famous through Amarone. For the Solér, only a portion of the grapes is dried. This creates concentration and a diversity of aromas including plum and damson, chocolate, and herbal spices.
