François Cotat – Kult-Sancerre aus Chavignol zwischen Terroir, Tradition und Präzision

François Cotat – Cult Sancerre from Chavignol: Between Terroir, Tradition, and Precision

June 19, 2026Sebastian Spiegel

Anyone talking about the greatest Sauvignon Blancs in the world can hardly overlook François Cotat. In the small winemaking village of Chavignol, in the heart of the Sancerre appellation, wines are produced that have little in common with the modern, primary-fruit-driven Sauvignon style. Instead, the focus is on origin, maturity, minerality, and extraordinary aging potential. François Cotat is now considered one of the most legendary winemakers of the Loire, and his wines enjoy cult status among sommeliers, collectors, and wine enthusiasts.

The terroir of Chavignol – the great sites of Sancerre

The domaine comprises just about four hectares of vineyards in some of the most renowned sites of Sancerre. Les Monts Damnés, La Grande Côte, and Les Culs de Beaujeu are particularly well-known. These steep slopes are among the most coveted terroirs in the Loire and are characterized by Kimmeridgian limestone soils, which are geologically closely related to Chablis. The combination of limestone, marl, and fossil deposits gives the wines their unmistakable salinity, depth, and longevity.

While many Sancerre wines are designed for freshness and early drinking, François Cotat produces Sauvignon Blancs with impressive structure, enormous tension, and an aging capacity of ten to twenty years or more.

The philosophy of François Cotat

In the cellar, François Cotat (pictured with his son and successor, Clement) works in a compromise-free, traditional manner. Yields are low, the harvest is done by hand, and it is usually significantly later than that of many neighbors. Fermentation is carried out exclusively with natural yeasts, and the wines are aged in old wooden barrels and large foudres. Filtration is reduced to an absolute minimum. The goal is not to produce a stylized Sauvignon Blanc, but to portray the personality of each individual site in an unadulterated way.

This approach leads to wines with great aromatic depth that often only reveal their full potential after several years of bottle aging. Connoisseurs therefore regularly compare the best bottlings from François Cotat to the great terroir wines of Burgundy.

Sancerre "Caillottes" – the ideal introduction to the world of François Cotat

The Sancerre "Caillottes" is particularly fascinating. The site is located near the Monts Damnés and is characterized by lime-rich soils with a high proportion of small limestone rocks. The wine was first bottled separately in 2005 and is now considered one of the most accessible wines of the domaine.

In the glass, the Caillottes shows an impressive combination of precision and elegance. Citrus fruits, white flowers, flint, and fine herbal aromas meet a chalky minerality and a long, salty finish. Despite its comparatively early accessibility, this wine also possesses remarkable aging potential.

The wines of François Cotat are among the most authentic and terroir-driven Sauvignon Blancs in France. They are exemplary of the great potential of Sancerre and impressively demonstrate how much depth, complexity, and longevity can be found in this grape variety. For lovers of mineral-driven white wines, they have been among the most sought-after references of the Loire for years.

Anyone wishing to experience Sancerre in its most original and fascinating form will find the François Cotat "Caillottes" to be a perfect entry point into the world of one of France's most significant winemakers.
