A daily look into his vineyards and a great deal of patience and attention to detail are obligations for him. The white wines are fermented in \"pièces,\" of which only 20% new oak is considered. By stirring the lees (bâtonnage), wines with great creaminess are created, which are not flabby and do not suppress the fruit.
