Throughout the entire process, minimal sulfur is used and there is little intervention. In the bottle, the wines then spend around 40 months on the lees. After disgorgement, no dosage is added, and they are bottled as Brut Nature, which perfectly expresses the vintage and the terroir. No one knows in advance whether there will be the same village wines or vineyard-designated wines each year. At the end of the day, everything could be different again with the next vintage, and one of the top sites, \"Les Crayères\" in Ambonnay, may be vinified from Pinot Noir one year and from Chardonnay the next. Sometimes there is both.
